Spencer Sausage Strata

Spencer Sausage Strata paired with Amish Bread and Homemade Jelly
This recipe was adapted from Wade Monckton at his Cast Iron Cookout at Victorian Country Inn

Pork Sausage                                    1 pound
French Bread or Amish Bread          1 large loaf
Eggs                                                  6 large brown eggs
Milk                                                  2.5 cups
Shredded Cheddar Cheese                4 cups (divided)
Salt and Pepper                                 to taste

Brown sausage in iron skillet then cool. Break bread into small pieces and place in large mixing bowl, then mix in sausage and 2 cups cheese. In another bowl whisk together eggs and milk. Pour egg mixture over bread and mix until all is moist. Place in refrigerator for at least one hour or overnight. Place in 14" Dutch oven or divide into a dozen individual ramekins. Add remaining 2 cups cheese on top.
Bake in dutch oven at 375 degrees for about 45 minutes (30 minutes in ramekins) until cheese is golden brown.
